SEA TASTING EXPERIENCE

• Fried squid tentacles, rings and anchovies with tartar sauce
• Bronze‑drawn spaghetti scented with lemon, almond cream and lightly seared prawns
• Sole with grilled vegetables, smoked extra virgin local oil and capers
• Meringue, strawberry mousse and Campari gelée

…LAND EXPERIENCE

• Chicken cubes with bacon, baby‑lettuce velouté, Parmesan drops and bread
• Pigato wine risotto with trombetta zucchini, dried cherry tomatoes and crumbled feta
• Crispy suckling‑pork belly with aubergine mille‑feuille
• Meringue, strawberry mousse and Campari gelée

• Pea pudding with foam, toasted almonds and sweet‑paprika crispy wafers
• Fresh tonnarelli with pesto, Albenga basil powder and pine nuts

Once you’ve chosen your path, all that’s left is to book, we’ll take care of the rest with the attention that defines us.
And as every year, at 22:30 the fireworks show lights up the Pier right in front of the Hotel and the Restaurant.
