{"id":33627,"date":"2026-06-11T14:43:34","date_gmt":"2026-06-11T12:43:34","guid":{"rendered":"https:\/\/ligurealassio.it\/?p=33627"},"modified":"2026-06-13T17:15:22","modified_gmt":"2026-06-13T15:15:22","slug":"la-saint-jacques-signature","status":"publish","type":"post","link":"https:\/\/ligurealassio.it\/fr\/la-saint-jacques-signature\/","title":{"rendered":"LA SAINT-JACQUES SIGNATURE"},"content":{"rendered":"<h3 style=\"text-align: center;\">Saint\u2011Jacques juste snack\u00e9es sur cr\u00e8me de pain grill\u00e9,<br \/>\nanchois et feuilles de oignon de Tropea<\/h3>\n<p>&nbsp;<\/p>\n<p>Temps de pr\u00e9paration : 20 minutes<br \/>\nTemps de cuisson : 10 minutes<\/p>\n<p>&nbsp;<\/p>\n<h5><strong>Ingr\u00e9dients pour 2 personnes<\/strong><\/h5>\n<ul role=\"list\">\n<li>4 noix de Saint\u2011Jacques (la partie blanche)<\/li>\n<li>4 filets d\u2019anchois au sel<\/li>\n<li>\u00bd poireau<\/li>\n<li>1 oignon rouge de Tropea<\/li>\n<li>150 g de pain rassis<\/li>\n<li>Bouillon de l\u00e9gumes, q.s.<\/li>\n<li>Huile d\u2019olive vierge extra, q.s.<\/li>\n<\/ul>\n<div><\/div>\n<h5><strong>Pr\u00e9paration<\/strong><\/h5>\n<ul>\n<li><strong>Dessaler les anchois :<\/strong><br \/>\nRincer les filets sous l\u2019eau courante et les s\u00e9cher d\u00e9licatement.<\/li>\n<li><strong>Pr\u00e9parer la cr\u00e8me de pain :<\/strong><br \/>\n\u00c9mincer finement le poireau et le faire revenir dans un peu d\u2019huile. Ajouter le pain grill\u00e9 en morceaux et laisser s\u2019impr\u00e9gner.<br \/>\nCouvrir de bouillon et cuire 5 minutes. Mixer puis passer au tamis fin pour obtenir une cr\u00e8me lisse.<\/li>\n<li><strong>Pr\u00e9parer l\u2019oignon de Tropea :<\/strong><br \/>\nS\u00e9parer l\u2019oignon en p\u00e9tales et les faire bouillir 5 minutes dans une solution 50 % eau \/ 50 % vinaigre. \u00c9goutter et refroidir dans de l\u2019eau glac\u00e9e pour fixer la couleur et la texture.<\/li>\n<li><strong>Snacker les Saint\u2011Jacques :<\/strong><br \/>\nNettoyer les noix et les snacker dans une po\u00eale tr\u00e8s chaude avec un filet d\u2019huile pendant environ 3 minutes, jusqu\u2019\u00e0 coloration.<\/li>\n<li><strong>Dresser le plat :<\/strong><br \/>\n\u00c9taler la cr\u00e8me de pain, disposer les Saint\u2011Jacques, ajouter un filet d\u2019anchois sur chacune et les p\u00e9tales d\u2019oignon.
