BROWNED SCALLOP OF OUR CHEF

BROWNED SCALLOP, PEA MIRROR AND CRISPY BACON

A famous saying goes: “If we love someone, preparing a good dinner is a wonderful way to tell them”. Are you ready to discover an original recipe full of passion and wisdom? Today our Chef Vincenzo Pisana wants to present an innovative mix of fish, meat and vegetable…. perfect combinations to create a simpe dish, but at the same time tasty and alternative.

INGREDIENTS FOR 4 PERSONS:


12 fresh scallops
150 g of peas
4 bacon slices (thick cut)
1 potato
1 spring onion
about 250 g of vegetable stock
oil
salt
pepper

Process for pea mirror:


Finely chop the spring onion and the potato, then put them into a saucepan with some oil to slowly brown them.
When you get your result, add the peas and roast them for 3 minutes on high heat. At this point, pour the vegetable stock and cook for about 20 minutes.
After the necessary time, mix everything with an immersion blender and pass the mixture through a strainer. In this way you get a smooth and glossy cream.

Process for browned scallop:


In a bowl dress the scallops with oil, salt and pepper.
Put on fire a non-stick pan and brown the scallops on high heat for about 3 minutes on each side, then place the scallops on a paper towel to dry them. Into the same pan roast the bacon cut into strips.

Presentation:


With the aid of a spoon, put the pea sauce on a plate as a mirror creating a drop, now place the browned scallops and put unevenly the crispy bacon.
Garnish with some extra virgin olive oil.

At this point your dish is ready and served… now you just have to taste. But remember this advice from the Chef: first of all you must taste with your eyes and then with your palate!
